Easy Chicken Manicotti

recipe for manicottiThis Manicotti Recipe is so easy, you'll want to add it to your regular weekly rotation of go-to recipes. You don't even have to cook the manicotti shells before baking.

You assemble the manicotti one day, let it soften in the spaghetti sauce in the fridge overnight, then bake it when you're ready. The assembly is so easy, you can do it one night after dinner.

I like to use smoked mozzarella cheese for a more "grown up" flavor. But if you've only got regular mozzarella on hand, that works fine.
