Brown Rice Salad

brown rice salad recipeWhen the weather's warm, I make a lot of hearty salads for dinner. Sometimes, they serve as the main course. Sometimes, they're a side dish. This Brown Rice Salad Recipe is one of my favorites. With a rainbow of vegetables, it's healthy and satisfying. All you need to add is a bowl of corn chowder and a nice thick slice of zucchini bread.

I LOVE brown rice salad, corn chowder and zucchini bread. You hit a triple play in my book! I have a question. Have you ever received those giant zucchini from well-meaning neighbors with a vegetable garden? They’re not great to cook with unless you stuff them. Have you tried using them in zucchini bread? Any other way?

Not from my neighbors, from my mom and relatives who all have great gardens. I think baked goods are a great place for them, because you don’t notice the seeds and they still lend moisture.
