Chocolate Beet Cake Recipe

chocolate beet cake recipeIt has taken me a long time -- a very long time - to develop a taste for beets. Probably because the only beets I tasted as a child were pickled beets from a can. Eew! Eventually, after much experimentation, I've come to enjoy roasted beets in salads and beet chips. But this Chocolate Beet Cake Recipe has to be the best.

Okay, in all fairness, you can't really taste the beets. It's sort of like carrot cake, in that respect. But the beets do add moisture, and a moist chocolate cake is always a good thing, right?

I HAD to click on your link to this. Beets are the one vegetable that I can not stand, even the smell is too much for me. I promise to try this though.
Every farmer’s market, I have to can or freeze whatever I do not sell. I have been making pickled beets for my dh.
He is the only one who likes beets in the whole family( of 7!), so may be this cake will help spread the joy. If we like it, I can freeze the beets instead. Much easier.

We tried this and my kids loved it! I enjoyed it better the first time when I used white flour but they liked it just as well with wheat. We didn’t put the chocolate chips on top but it was still great!
