Kale with Pancetta

This Kale Recipe brings together a few simple ingredients in a wonderfully tasty way. Kale can be slightly bitter and tough. But in this recipe, it's briefly blanched to soften it, then combined with salty pancetta (Italian bacon) and parmesan cheese.
