Grilled Cheese and Tomato Please!

grilled cheese sandwich recipeThere's a reason the Grilled Cheese Sandwich is a classic. It's the same reason kids love it. It's darned good. When it's made right, of course. You see, like most recipes, it all comes down to the individual ingredients. Even though making grilled cheese is simple, the difference between amazing and so-so is really the selection of the ingredients and a few simple tricks in preparing them.

For me, sourdough bread is the best. It's chewy enough to stand up to grilling and it has a little bite. I don't normally recommend American cheese, but for grilled cheese it works great. Cheddar is my second favorite. The tomatoes have to be ripe, preferably homegrown or from a local farmer's market. And you have to butter the outside of the bread, so it will get nice and crispy. Yum! I simply love a grilled cheese with tomato! The only way I will eat one. I enjoy a blend of cheddar and monterray jack cheese.

Here is a secret: You can order a grilled cheese from a national chain with lettuce, tomato, pickle and grilled onions. Delicious!

We are Italian and use mozzarella and tomato on fresh Italian bread. Sometimes we add cooked spinach (cooked in olive oil and garlic) to it.

Yes. When I order grilled cheese, this is what I expect. So many places give you a broiled cheese sandwich, leaving the bread slices open with melted cheese on top.
That is NOT grilled cheese and they should not list it as such on the menus.
The only reason I bring this up is that every time I want a proper grilled cheese sandwich I have to go through a series of questions and answers with the poor wait staff and sometimes they don’t know and have to go in the back to ask the chef.
And the open broiled sandwhich is often dried out or cold by the time it reaches your table.
