This patriotic poke cake recipe makes a festive Memorial Day dessert that's easy to make. Unlike most poke cakes, this one is not made with gelatin. Rather, it is made with a coconut milk filling, which not only provides a perfect canvas for tinting the cake red and blue, but also wonderful texture and flavor. This recipe starts with a cake mix (if you prefer to make your own cake, you can use any white or yellow cake recipe for the batter and just follow the directions for the poke filling in the recipe). Garnish with fresh blueberries and raspberries.
