You don't often think of making soups in the summer, but with fresh vegetables in abundance, this corn chowder recipe is a great way to enjoy summer's bounty. Onions, red peppers, corn, potatoes and bacon are bathed in a creamy chowder that makes the perfect light meal on a crisp summer evening. Add a hunk of crusty French bread and my green salad with grapes and bacon, and you've got a meal that will hit the spot but won't make you feel too full.
