I know, I know. Pot roast in the summer? But really, this Coca Cola pot roast recipe is cooked on the stove, not in the oven, so it won't heat up the house. And it is the perfect make-early-in-the-week-and-have-lots-of-leftovers meal. Feel free to add carrots or turnips to the pot, too. They would make this a nice, one-dish meal. Or serve with roasted green beans.
