Could there be a better way to enjoy vegetables than in a cake? OK, this chocolate zucchini cake isn't going to give you a serving of veggies in every bite. But it is a great way to use that abundance of zucchini from the garden.You won't really taste the zucchini. It just lends some moisture to this cake. Try topping the cake with the chocolate chips instead of mixing them in. Alternatively, try folding the chopped walnuts into the cake batter instead of topping the cake with them. This recipe is flexible.
