Healthy Lunch Ideas for Kids

chinese chicken saladThese healthy lunch ideas for kids are perfect for back to school. All of these recipes are high in protein, fiber, vitamins and minerals, giving kids the nutrients they need to make it through the afternoon fully alert and ready to work.

My Chinese chicken salad is a favorite with my kids. This recipe has just four ingredients (no chopping required!) and an easy homemade dressing. Pack the dressing separately, and let the kids drizzle it over the salad just before eating, so the lettuce doesn't get soggy.

Want something simpler? Try making hard boiled eggs. They're full of protein and a good source of certain B vitamins and minerals. Even better: You can make hard-boiled eggs several days in advance and just refrigerate them. Make sure you pack an ice pack in your child's lunch if you're sending a hard-boiled egg (or anything else you would normally keep in the refrigerator).
