These turkey wraps aren't your mama's turkey sandwiches. Instead of turkey on white bread with mayo, these wraps are made with turkey breast (or leftover roast turkey), apricot jam, bacon and pepper jack cheese. The combination of meaty, sweet, salty and spicy is a winning one that really appeals to kids (if you have kids who object to even the slightest bit of spice, replace the pepper jack with Monterey jack or cheddar cheese). These wraps make fantastic sandwiches for school lunches.
