This zucchini quiche recipe is a fantastic way to enjoy fresh zucchini from the garden or farmer's market. If you happen to have yellow squash on hand, too, feel free to throw some of that in instead of some of the zucchini. It will taste just as good.This recipe also calls for pesto. You can use store-bought pesto or make your own. For variety, try kale pesto.
The nice thing about quiche is you can serve it for breakfast, lunch or dinner. And it's also a great make-ahead dish. Just prepare, cool completely, wrap tightly in foil and freeze. When ready to serve, thaw in the refrigerator completely, then warm in a 350-degree oven.
