Quiche is a staple in my house, because it is so easy to make, and you can serve it for breakfast, lunch or dinner. Even better: All of these quiche recipes can be made in advance. They'll keep in the refrigerator for up to one week or in the freezer for up to three months (make sure you wrap them tightly in aluminum foil). My quiche lorraine recipe is always popular with the kids (why wouldn't it be? It's just ham and cheese in a pie!). But if you want to help the kids sample more vegetables, try my spinach quiche recipe. With three kinds of cheese, it has many layers of great flavor.
All of these recipes can be made with either a frozen pie crust or refrigerated pie crust. Or, if you are so inclined, make your own crust.
