Quiche is one of my favorite things to make for busy weeknights, because it's easy to make in advance -- it usually tastes better the next day, and if you're so inclined, it freezes well, too -- and the whole family loves it. I make lots of different varieties of quiche, but this crab quiche recipe is a summertime favorite. When crabs are in season, I use backfin lump crab meat for this quiche (there is really nothing better). But even when crabs aren't in season, you can make this quiche. Just use a high-quality canned crab meat. If you can't find Old Bay seasoning, try creole seasoning or any seafood seasoning. For more quiche recipes, see also:

- Broccoli Bacon Quiche - Broccoli and bacon are a winning combination, and when bathed in a cheesy custard then baked in a pie, the result is simply irresistible.
- Spinach Quiche - This dish is my favorite way to introduce kids to spinach. It's rich and cheesy and guaranteed to please even the pickiest eaters.
