You probably think of carrot sticks and apples when you think of healthy snacks. And those are great choices for an afternoon pick-me-up. But oftentimes, the kids will reject fruits and vegetables on principle alone. That's when you have to get creative. These healthy snacks are full of vitamins, minerals, protein, fiber and heart-healthy fats, but they don't have that plain rice cake flavor that makes you feel like you're missing something.My pumpkin cream cheese muffins, for example, seem like sweet cupcakes. But they're loaded with fiber-rich bran and vitamin-rich pumpkin.
And my guacamole recipe is rich with heart-healthy omega-3 fatty acids.
Don't dismiss deviled eggs, either. Eggs are a good source of protein, B vitamins, choline (which supports brain health) and lutein (great for eye health). And when you buy omega-3-enriched eggs, you get a boost for your heart as well. But the best part about these snacks is that they're so packed with nutrients, they'll keep the kids going straight through dinner.
