When I say this, it's going to sound like I'm bragging. Honestly, I'm not. Brussels sprouts are one of my kids' favorite vegetables. And it's not because I'm such a great mother and I've raised vegetable-eaters. Truth is, they don't like a whole heck of a lot of vegetables, and if given a choice, anything green is usually the thing left over on their plates.But these Brussels sprouts with bacon and hazelnuts are different. For starters, the Brussels sprouts are shredded, like cabbage (they are, after all, basically just mini cabbages), so the texture is familiar. It doesn't hurt, of course, that the Brussels sprouts are then tossed with bacon, maple syrup, hazelnuts and cheese.
Think that takes away from the nutritional value of the Brussels sprouts? Think again. The amount of bacon in this recipe is rather small. And the hazelnuts are heart-healthy. If you're concerned about sugar, cut the amount of maple syrup in half.
