This vegetarian chili recipe is a great make-ahead meal for busy families, whether you're vegetarian or not. It's so hearty, you won't even think about missing any meat. And it is loaded with vegetables, so it's super healthy, too. The best part is this chili freezes beautifully. I like to make a double batch on Sunday and serve the leftovers for days afterward (if they last that long).Top this chili with a dollop of sour cream, chopped onions and shredded cheddar cheese. Serve with a green salad and cornbread.
