cauliflower twice baked potatoesWe all like to eat food that's familiar to us, food we know we'll like. If you have picky eaters in the house, you know what I mean. But there's no need to battle with them to expand their culinary horizons. Sometimes, the way to cook nutritious food for picky eaters is simply to pair vegetables with foods they already like.

Take these cauliflower twice baked potatoes. Your picky eaters may not like cauliflower, but chances are, they do like potatoes. By mixing the cauliflower with the potatoes and all the other things that make twice baked potatoes good (cheese, bacon, etc.), they'll be more willing to try it.

There's no need to hide or sneak vegetables into kids' food. Feel free to tell them what you're doing. This builds trust. And when they see how good (and familiar) the new foods look, they may just be willing to give them a try.

More great recipes to try for picky eaters: broccoli bacon salad, spinach quiche and potato croquettes with vegetables.
