It isn't really all that hard if you think about it. Sweet potatoes are full of vitamin A and fiber. You just have to choose a recipe like my mashed sweet potatoes and carrots instead of a sugar-laden sweet potato casserole topped with marshmallows.
Likewise, cranberries are rich in antioxidants. And when you make your own cranberry sauce, you can control how much sugar you put in it (plus it tastes so much better than the stuff that comes in a can.
Even pumpkin pie is pretty nutritious. My easy pumpkin pie recipe is a cinch to make, and it's loaded with vitamins, minerals and fiber.
