I never would have guessed that this shredded Brussels sprouts salad would be one of the most popular dishes on our Thanksgiving table. But it was. I think people liked having something light and green on the plate, and the combination of Brussels sprouts, walnuts and sweetened dried cranberries is a winning one. As a matter of fact, I never told anybody the dish was made with Brussels sprouts until the bowl was almost empty. I guess everybody thought it was just salad or a slaw. And when you think about it, Brussels sprouts are just mini cabbages. Shredding them makes them much more appealing to people who don't usually eat Brussels Sprouts.
This recipe would be perfect for Christmas dinner - it's already red and green!
