I've made several variations of this recipe, swapping out the semisweet chocolate chips for dark chocolate chips or even butterscotch chips. I've also made this recipe with unsweetened coconut and white whole wheat flour. For best results, try using half whole wheat flour and half all-purpose flour. It'll add a little fiber to the recipe, but won't make these bar cookies tough.
