I had the luxury of enjoying some of the best chicken tortilla soup I've ever tasted a few years ago in Texas. The rich, tomato-based soup was thick and almost stew-like (but not - it was still more soup than stew) and full of great flavors. This soup is my best imitation of that dish, and I think it comes pretty close. I like to garnish it with sour cream and fresh chopped cilantro.
The neat thing about this soup is that it has two shortcuts that guarantee it will be full of flavor and lush texture - condensed tomato soup and jarred salsa. Use a good-quality salsa for the best flavor.
