Got leftover cooked rice and some frozen shrimp? Then you've got just about everything you need to make this better-than-takeout shrimp fried rice recipe
. I use frozen peas and carrots for this recipe, because I always have them on hand, and they're small, so they thaw quickly and cook quickly. If you prefer to use fresh vegetables, go right ahead. Just be sure to cut them into a small dice, so they'll cook quickly. And you'll want to cook them separately, before you add the rice.
To make this recipe a little healthier, use brown rice instead of white. Just be sure the rice is completely chilled beforehand. If it's a little sticky and clumpy, that's perfect.
