Ireland can get pretty cold and wet in the winter. It's no surprise, therefore, that the Irish know comfort food. Take colcannon. This Irish dish of mashed potatoes, cabbage (or kale) and onions, is about as comforting as it gets. It's like a hearty bowl of mashed potatoes with good things mixed into it (I add bacon for extra richness and protein). Then when you're ready to serve the colcannon, spoon it into a bowl, and make a well in the center. Fill the well with melted butter. Can you say decadent? Mmmm....
