I'm a huge fan of the samoas Girl Scout cookies. You know - the ones with the coconut, caramel and chocolate on top? So rich, so delicious! This chocolate coconut cake recipe
reminds me of those cookies. It's a simple-to-make chocolate cake that starts with a cake mix, made more special with the addition of toasted coconut and chocolate chips.
But the topping is what really sets this cake apart. It's a homemade maple caramel sauce mixed with toasted coconut, then finished off with more chocolate chips. I like to use an all-natural organic cake mix. I like the idea of not having any hydrogenated oils in my cake. And many of the natural cake mixes are made with the more nutritious whole wheat flours.
