Ever open that fridge and see nothing but ground beef and a package of shredded cheese?

I did last week, and I came up with this delicious recipe for Beef Quesadillas. The kids loved it!

I used chili con queso from a jar, but if you don't have that on hand, just add more shredded cheese. If you like, add some chopped tomatoes (either fresh or canned) to the recipe. This one is definitely a keeper!
