Icy and sweet, this smoothie recipe is like a sweet potato souffle milkshake.
Prep Time: 10 minutes
Ingredients:
- 1 3.5 oz. container baby food sweet potatoes (such as Gerber 2nd stage)
- 3/4 cup frozen pineapple chunks
- 1/2 cup pineapple-coconut juice
- 1 graham cracker
- 1/2 cup low-fat yogurt
- 1/2 banana
- 3/4 cup ice
- cinnamon for garnish
Preparation:
- Place sweet potatoes and frozen pineapple in a blender, Vita Mix or food processor fitted with a metal blade.
- Pour the pineapple-coconut juice on top of the fruit.
- Add the remaining ingredients in the order listed. Puree until smooth.
Note: If you are using a blender, you may need to stop it to push the pineapple into the blades in order for it to crush properly. Remove the blender container from the motor. Use a spoon to push the pineapple down into the blades. Return the blender container to the motor, and puree until smooth.
Makes 2-3 servings.
