Sweet Potato Souffle Smoothies

Most smoothie recipes are made exclusively with fruit. And of the vegetable smoothies out there, few are sweet enough for kids to actually like. This sweet potato souffle smoothie is the exception.

Icy and sweet, this smoothie recipe is like a sweet potato souffle milkshake.

Prep Time: 10 minutes

Ingredients:

  • 1 3.5 oz. container baby food sweet potatoes (such as Gerber 2nd stage)
  • 3/4 cup frozen pineapple chunks
  • 1/2 cup pineapple-coconut juice
  • 1 graham cracker
  • 1/2 cup low-fat yogurt
  • 1/2 banana
  • 3/4 cup ice
  • cinnamon for garnish

Preparation:

  1. Place sweet potatoes and frozen pineapple in a blender, Vita Mix or food processor fitted with a metal blade.

  2. Pour the pineapple-coconut juice on top of the fruit.

  3. Add the remaining ingredients in the order listed. Puree until smooth.

Note: If you are using a blender, you may need to stop it to push the pineapple into the blades in order for it to crush properly. Remove the blender container from the motor. Use a spoon to push the pineapple down into the blades. Return the blender container to the motor, and puree until smooth.

Makes 2-3 servings.
