Recipe for Chocolate Chip Muffins

These chocolate chip muffins are moist and tender on the inside and crispy on top. Vanilla yogurt is the secret ingredient in this recipe for chocolate chip muffins.

Ingredients:

  • 1-1/2 cups all-purpose flour
  • 1/2 cup white whole wheat flour or whole wheat pastry flour
  • 1 Tbsp. baking powder
  • 1/3 cup sugar
  • 1/4 cup canola oil
  • 1/3 cup non-fat vanilla yogurt
  • 2 large eggs
  • 3/4 cup skim milk
  • 1 tsp. corn syrup
  • 1 tsp. vanilla extract
  • 1 cup dark chocolate chips

Preparation:

  1. Preheat oven to 350 degrees F.

  2. Line a muffin tin with cupcake liners or spray with nonstick cooking spray.

  3. In a large mixing bowl, stir together the flours and baking powder.

  4. In a medium bowl, whisk together the sugar, canola oil, yogurt, eggs, milk, corn syrup and vanilla extract.

  5. Fold the wet ingredients into the flour mixture. Stir until just combined. Do not overmix.

  6. Stir in the chocolate chips.

  7. Fill each prepared muffin cup with approximately 1/3 cup of batter. Bake 28 to 30 minutes or until golden brown on top.

Makes 12 chocolate chip muffins.
