Chocolate Zucchini Bread

This chocolate zucchini bread recipe makes two loaves. Serve one today for a breakfast bread or sweet afternoon snack, and freeze the other one for later. Or give the other loaf to a friend with this recipe for zucchini bread attached.

Ingredients:

  • 2 oz. unsweetened chocolate
  • 3 large eggs
  • 2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 2 cups shredded zucchini
  • 1 apple, peeled and shredded
  • 1 tsp. vanilla
  • 1 cup all-purpose flour
  • 1 cup whole wheat pastry flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 3/4 cup semisweet chocolate chips

Preparation:

  1. Preheat oven to 350 degrees F. Spray two loaf pans with nonstick cooking spray.

  2. Heat chocolate in a microwave-safe bowl on 50% power for 1 minute. Stir. If not melted, continue heating on 50% power in 30-second increments until melted. Set aside to cool.

  3. In a large bowl, beat eggs, sugar, oil, and applesauce together.

  4. Stir in zucchini, shredded apple and vanilla.

  5. Stir cooled chocolate into zucchini mixture.

  6. In a small bowl, whisk together the flours, baking soda, cinnamon and nutmeg. Stir into the zucchini mixture.

  7. Stir in the chocolate chips.

  8. Pour batter into prepared loaf pans. Bake 50-60 minutes or until a knife inserted in the center of the loaves comes out with just a few crumbs attached.
