Ingredients:
- 2 oz. unsweetened chocolate
- 3 large eggs
- 2 cups granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup applesauce
- 2 cups shredded zucchini
- 1 apple, peeled and shredded
- 1 tsp. vanilla
- 1 cup all-purpose flour
- 1 cup whole wheat pastry flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 3/4 cup semisweet chocolate chips
Preparation:
- Preheat oven to 350 degrees F. Spray two loaf pans with nonstick cooking spray.
- Heat chocolate in a microwave-safe bowl on 50% power for 1 minute. Stir. If not melted, continue heating on 50% power in 30-second increments until melted. Set aside to cool.
- In a large bowl, beat eggs, sugar, oil, and applesauce together.
- Stir in zucchini, shredded apple and vanilla.
- Stir cooled chocolate into zucchini mixture.
- In a small bowl, whisk together the flours, baking soda, cinnamon and nutmeg. Stir into the zucchini mixture.
- Stir in the chocolate chips.
- Pour batter into prepared loaf pans. Bake 50-60 minutes or until a knife inserted in the center of the loaves comes out with just a few crumbs attached.
