Corn muffins are delicious with everything from chili to tacos. This corn muffin recipe has a little extra kick, thanks to the addition of salsa. You can make it as spicy or mild as you like, depending on the salsa you choose.
Prep Time: 15 minutes
Cook Time: 20 minutes
Ingredients:
- 1 8-1/2 oz. package corn bread or corn muffin mix (such as Jiffy)
- 2 Tbsp. prepared salsa (your own homemade or from a jar)
- 1/3 cup buttermilk
- 1 large egg
- 1/3 cup plain yogurt
Preparation:
- Preheat oven to 400 degrees F. Line a muffin tin with paper muffin cups or spray with nonstick spray.
- Dump muffin mix and salsa in a large mixing bowl.
- In a small bowl, whisk together the buttermilk, egg and yogurt.
- Add to the muffin mix. Stir until just combined. Let rest 5 minutes.
- Fill muffin cups with batter almost to the top. Bake 15 to 18 minutes or until golden on top.
Makes 6-8 muffins.
