Maple Oatmeal Scones

I like to make these maple scones for breakfast when we're having company. Dense and chewy with a sweet glaze, these maple oatmeal scones make the perfect sweet treat in the morning or for an afternoon snack.

You can even make these maple scones in advance and freeze them. Just wait until you're ready to serve them to put the glaze on.

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 cup rolled oats
  • 1-1/2 cups all-purpose flour
  • 1/2 tsp. kosher salt
  • 2 Tbsp. granulated sugar
  • 1 Tbsp. baking powder
  • 2-1/2 Tbsp. butter, cold
  • 2 Tbsp. maple syrup
  • 1 large egg
  • 1/2 cup half and half
  • 1/2 tsp. maple extract
  • 1/2 cup chopped pecans
  • For Glaze:
  • 1 cup powdered sugar
  • 3-5 Tbsp. milk

Preparation:

  1. Preheat oven to 425 degrees F. Spray a baking sheet with cooking spray.

  2. Place oatmeal in a food processor or blender and pulse until the mixture becomes a ground meal. Place in a large mixing bowl.

  3. Add flour, salt, sugar and baking powder.

  4. Cut in butter with a pastry blender or two knives

  5. In a small bowl, whisk together maple syrup, egg, half and half and maple extract. Pour into flour mixture and stir until combined. Do not overmix.

  6. Turn out onto a lightly-floured surface. Knead pecans into dough.

  7. Shape and flatten dough into an 8-inch round. Cut into 8 wedges. Place wedges on prepared baking sheet.

  8. Bake 13-15 minutes until the tops of the scones get lightly-browned.

  9. Cool on a wire rack.

  10. Prepare glaze: Whisk together sugar and milk until the mixture forms the consistency of a glaze that you can drizzle.

  11. Drizzle glaze over scones.
Serve immediately.
