Zucchini Bread Recipe

This zucchini bread recipe (click here for larger image) is perfect for using up that bumper crop of zucchini. The warm smell of pumpkin pie spice and mace makes this zucchini bread recipe smell divine while it's baking. A hint of lemon zest gives this easy zucchini bread recipe zip!

Prep Time: 20 minutes

Cook Time: 50 minutes

Ingredients:

  • 1-1/2 cups all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 2 tsp. pumpkin pie spice
  • 1/2 tsp. ground mace
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1 tsp. vanilla
  • zest of one lemon
  • 1-1/2 cups shredded zucchini

Preparation:

  1. Preheat oven to 325 degrees F. Spray a loaf pan with cooking spray.

  2. In a medium bowl, sift together first 6 ingredients (through mace).

  3. In a large bowl, beat eggs, oil, sugar, vanilla and lemon zest. Stir in zucchini.

  4. Stir flour mixture into zucchini mixture. Pour into prepared pan.

  5. Bake 40-55 minutes or until a knife inserted in the center comes out clean.

Makes 8-12 slices of zucchini bread.
