Blueberry Bread Pudding Recipe

This blueberry bread pudding recipe is a nice breakfast for special occasions. Or serve this bread pudding with vanilla sauce for a refreshing dessert.

You can use fresh or frozen blueberries for this bread pudding recipe.

Ingredients:

  • 2 large eggs
  • 1 cup milk
  • 1 12 oz. can evaporated milk
  • 3/4 cup granulated sugar
  • 6-8 slices French bread cut into 1-inch cubes to equal 4 cups
  • 1-1/2 cups blueberries
  • powdered sugar for garnish

Preparation:

  1. Preheat oven to 350 degrees F. Spray individual ramekins or an 8 x 8 pan with cooking spray.

  2. In a large bowl, whisk eggs, milks and sugar together.

  3. Add bread cubes, pressing down to allow bread to absorb as much liquid as possible. Let sit 20 minutes.

  4. Gently stir blueberries into bread mixture. Spoon into prepared ramekins or baking dish.

  5. Bake 30-45 minutes, until pudding is golden on top. Your baking time will depend on how deep your ramekins are. If you are making this in an 8 x 8 pan, it may take up to an hour to bake.

Makes 6 servings.
