This blueberry bread pudding recipe is a nice breakfast for special occasions. Or serve this bread pudding with vanilla sauce for a refreshing dessert.
You can use fresh or frozen blueberries for this bread pudding recipe.
Ingredients:
- 2 large eggs
- 1 cup milk
- 1 12 oz. can evaporated milk
- 3/4 cup granulated sugar
- 6-8 slices French bread cut into 1-inch cubes to equal 4 cups
- 1-1/2 cups blueberries
- powdered sugar for garnish
Preparation:
- Preheat oven to 350 degrees F. Spray individual ramekins or an 8 x 8 pan with cooking spray.
- In a large bowl, whisk eggs, milks and sugar together.
- Add bread cubes, pressing down to allow bread to absorb as much liquid as possible. Let sit 20 minutes.
- Gently stir blueberries into bread mixture. Spoon into prepared ramekins or baking dish.
- Bake 30-45 minutes, until pudding is golden on top. Your baking time will depend on how deep your ramekins are. If you are making this in an 8 x 8 pan, it may take up to an hour to bake.
