Chocolate Chip Pancakes

These chocolate chip pancakes are a favorite of my kids' for sleepover parties, birthdays, back to school and the holidays.

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Ingredients:

  • 2 cups Heart Smart Bisquick (or regular)
  • 1 cup skim milk
  • 1/4 cup seltzer water
  • 1/2 cup miniature chocolate chips

Preparation:

  1. Preheat a griddle or electric skillet (compare prices) to 375 degrees F. Or heat a large, heavy skillet over medium heat.

  2. Combine Bisquick, milk and seltzer water in a large bowl. Stir until mixed, but do not beat. It's okay if the batter is lumpy.

  3. Let batter stand 10 minutes.

  4. Stir in the chocolate chips.

  5. Spray the griddle with cooking spray or grease with 1 tsp. shortening, if desired. Reduce temperature to 350 degrees F.

  6. Ladle 1/4-cupfuls of the batter onto the prepared griddle. Cook until bubbles start to form on the surface of the pancakes.

  7. Flip. Cook another 2 minutes or until the pancakes are golden brown on the bottom. Serve immediately.

Great Pancakes! Easy to Make! Egg free!, Member JoyceLaRosa

These pancakes are great! Very tasty. They were very easy to make and cooked up to be light brown and fluffy. I used lemon seltzer. I also used the heart smart Bisquick as the recipe suggests. I was especially happy to find this recipe since it does not require eggs and Bisquick is egg & nut free. I have a son who is allergic to peanuts and eggs so I can only make home made pancakes. I have tried many recipes and these are by far the best! (""by far"" is an understatement. ) My goal is to keep trying recipes until I find something that tastes great and a recipe where you would not know the eggs are missing - finding this recipe was SUCCESS! Thank you, Stephanie, for posting this recipe! We will be making it every week in our house! If you compare with other pancake recipes this one is also pretty healthy. Low in cholesterol etc. And the best part is, you are NOT sacrificing great taste. :-)
