Healthy Chocolate Chip Cookies Recipe
These healthy chocolate chip cookies are made with heart-healthy oat bran, oatmeal and walnuts. Dark chocolate chips make these healthy chocolate chip cookies even healthier.Ingredients:
- 1 cup oat bran
- 1 cup all-purpose flour
- 1 cup white whole wheat flour
- 1/2 tsp. baking soda
- 1/4 tsp. kosher salt
- 1 cup butter, softened
- 2/3 cup firmly-packed brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp. vanilla
- 1 cup oatmeal (rolled oats)
- 1 cup dark chocolate chips
- 1/2 cup chopped walnuts
Preparation:
- Preheat oven to 350 degrees F. Line two cookie sheets with silpat mats (compare prices).
- Place oat bran in a blender or food processor and pulse until oat bran is very fine, almost the texture of flour.
- In a small bowl, stir together oat bran, flours, baking soda and salt. In a large bowl, beat butter and sugars with an electric mixer until fluffy. Beat in eggs and vanilla. Gradually beat in flour mixture until combined.
- Stir in oatmeal, chocolate chips and walnuts. Drop chocolate chip cookie dough by rounded teaspoonsful onto prepared cookie sheets. Bake 12-15 minutes until golden around the edges, but not completely set in the middle.
