Healthy Chocolate Chip Cookies Recipe

These healthy chocolate chip cookies are made with heart-healthy oat bran, oatmeal and walnuts. Dark chocolate chips make these healthy chocolate chip cookies even healthier.
Ingredients:
  • 1 cup oat bran
  • 1 cup all-purpose flour
  • 1 cup white whole wheat flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. kosher salt
  • 1 cup butter, softened
  • 2/3 cup firmly-packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp. vanilla
  • 1 cup oatmeal (rolled oats)
  • 1 cup dark chocolate chips
  • 1/2 cup chopped walnuts
Preparation:
  1. Preheat oven to 350 degrees F. Line two cookie sheets with silpat mats (compare prices).

  2. Place oat bran in a blender or food processor and pulse until oat bran is very fine, almost the texture of flour.

  3. In a small bowl, stir together oat bran, flours, baking soda and salt. In a large bowl, beat butter and sugars with an electric mixer until fluffy. Beat in eggs and vanilla. Gradually beat in flour mixture until combined.

  4. Stir in oatmeal, chocolate chips and walnuts. Drop chocolate chip cookie dough by rounded teaspoonsful onto prepared cookie sheets. Bake 12-15 minutes until golden around the edges, but not completely set in the middle.
Makes 36 healthy chocolate chip cookies.
