Double Chocolate Cranberry Cookies

These cranberry cookies are enrobed in a dark chocolate dough and dotted with white chocolate chips. Can you say yummy? Oh yes!

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 10 Tbsp. butter, softened
  • 3/4 cup brown sugar, packed
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1/2 tsp. baking soda
  • 1-1/4 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 3/4 cup sweetened dried cranberries
  • 3/4 cup white chocolate chips

Preparation:

  1. Preheat oven to 375 degrees F.

  2. in a large bowl, beat butter and brown sugar together with an electric mixer until creamy. Add vanilla and egg, and beat until well-combined.

  3. In a small bowl, whisk together baking soda, flour, and cocoa powder. Add to butter mixture, beating with electric mixer.

  4. Stir in cranberries and white chocolate chips.

  5. Drop by rounded teaspoons onto ungreased cookie sheets approximately 2 inches apart. Bake 8 to 10 minutes or until lightly browned.
