Adding Royal Icing to a Pastry Bag

Royal Icing Recipe

Royal icing is the icing of choice for everything from decorating gingerbread houses to sugar cookies. This recipe calls for meringue powder in place of egg whites. You can find meringue powder at craft stores (such as Michaels), gourmet stores and specialty cake decorating shops.

Ingredients:

  • 4 cups powdered sugar
  • 3 Tbsp. meringue powder
  • 1/4 cup to 1/2 cup warm water

Preparation:

  1. Beat the powdered sugar and meringue powder together with an electric mixer.

  2. Beat in 1/4 cup of the warm water. If the icing isn't smooth enough, add additional water, one tablespoon at a time until it reaches the desired consistency.

Note: For gingerbread house decorating, your icing should be the consistency of toothpaste. For cookie decorating, you will want a slightly thinner icing.
