Molasses Cookies Recipe
These soft molasses cookies make a wonderful treat for bake sales, cookie exchange parties, and in
pumpkin trifle. Store these molasses cookies in an airtight container with a piece of bread. That will keep them soft and chewy.
Ingredients:
- 3/4 cup butter, melted
- 1 cup firmly-packed light brown sugar
- 1 large egg
- 1/4 cup molasses
- 1 cup all-purpose flour
- 1 cup whole wheat pastry flour
- 1 tsp. baking soda
- 1/2 tsp. kosher salt
- 1 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. nutmeg
- 1/4 tsp. ginger
- 1/2 cup granulated sugar
Preparation:
- Stir melted butter, brown sugar, egg and molasses together until smooth.
- In a separate bowl, whisk together flours, baking soda, salt, cinnamon, cloves, nutmeg and ginger. Stir into wet ingredients until well-incorporated.
- Cover and refrigerate 1-2 hours.
- Preheat oven to 375 degrees F. Line cookie sheets with parchment paper or a silpat mat (Compare Prices).
- Form dough into 1-inch balls. Roll in granulated sugar. Place on prepared cookie sheets.
- Bake 7-8 minutes until just set around the edges. Do not overbake, or the cookies will turn crisp. Cool on wire racks.
