Molasses Cookies Recipe

These soft molasses cookies make a wonderful treat for bake sales, cookie exchange parties, and in pumpkin trifle. Store these molasses cookies in an airtight container with a piece of bread. That will keep them soft and chewy.

Ingredients:

  • 3/4 cup butter, melted
  • 1 cup firmly-packed light brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 cup all-purpose flour
  • 1 cup whole wheat pastry flour
  • 1 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground cloves
  • 1/2 tsp. nutmeg
  • 1/4 tsp. ginger
  • 1/2 cup granulated sugar

Preparation:

  1. Stir melted butter, brown sugar, egg and molasses together until smooth.

  2. In a separate bowl, whisk together flours, baking soda, salt, cinnamon, cloves, nutmeg and ginger. Stir into wet ingredients until well-incorporated.

  3. Cover and refrigerate 1-2 hours.

  4. Preheat oven to 375 degrees F. Line cookie sheets with parchment paper or a silpat mat (Compare Prices).

  5. Form dough into 1-inch balls. Roll in granulated sugar. Place on prepared cookie sheets.

  6. Bake 7-8 minutes until just set around the edges. Do not overbake, or the cookies will turn crisp. Cool on wire racks.
