Blueberry cobbler is one of my favorite ways to enjoy fresh blueberries. And this cobbler recipe is so simple, the kids can make it all by themselves. A scoop of vanilla ice cream or a dollop of whipped cream makes the perfect garnish for this yummy blueberry cobbler. Don't Miss: Blueberry Recipes

Prep Time: 15 minutes

Cook Time: 40 minutes

Total Time: 55 minutes

Yield: 6-8 servings

Ingredients:

  • 3 cups fresh or frozen blueberries
  • juice and zest of 3 lemons
  • 3/4 cup granulated sugar, divided
  • 1 Tbsp. cornstarch
  • 2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup butter
  • 1/2 cup whole milk

Preparation:

  1. Preheat oven to 375 degrees F.

  2. Spray an 8-inch square baking dish with cooking spray.

  3. Place blueberries, lemon juice, lemon zest, 2 Tbsp. sugar and the cornstarch together in the baking dish. Mix gently.

  4. In a mixing bowl, sift together the flour, baking powder, remaining sugar and salt.

  5. Cut in the butter until the mixture resembles pea-sized crumbs.

  6. Stir in the milk until a loose dough forms.

  7. Dollop cobbler dough over blueberry mixture. Bake 35-40 minutes until the topping of the blueberry cobbler is golden brown, and the blueberries are bubbly.
