Blueberry cobbler is one of my favorite ways to enjoy fresh blueberries. And this cobbler recipe is so simple, the kids can make it all by themselves. A scoop of vanilla ice cream or a dollop of whipped cream makes the perfect garnish for this yummy blueberry cobbler.

Yield: 6-8 servings
Ingredients:
- 3 cups fresh or frozen blueberries
- juice and zest of 3 lemons
- 3/4 cup granulated sugar, divided
- 1 Tbsp. cornstarch
- 2 cups all-purpose flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup butter
- 1/2 cup whole milk
Preparation:
- Preheat oven to 375 degrees F.
- Spray an 8-inch square baking dish with cooking spray.
- Place blueberries, lemon juice, lemon zest, 2 Tbsp. sugar and the cornstarch together in the baking dish. Mix gently.
- In a mixing bowl, sift together the flour, baking powder, remaining sugar and salt.
- Cut in the butter until the mixture resembles pea-sized crumbs.
- Stir in the milk until a loose dough forms.
- Dollop cobbler dough over blueberry mixture. Bake 35-40 minutes until the topping of the blueberry cobbler is golden brown, and the blueberries are bubbly.
