Homemade Peppermint Marshmallows

Homemade marshmallows are so superior to store-bought marshmallows, you won't ever want to go back. This marshmallow recipe is made with egg whites. If you are concerned about the safety of using raw egg whites for kids, try this homemade marshmallows recipe instead.

Ingredients:

  • 3 packets unflavored gelatin
  • 1/2 cup water
  • 1-1/3 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/3 cup water
  • 3 large egg whites
  • pinch of salt
  • 1 tsp. peppermint extract
  • 1/2 cup peppermint chips or crushed peppermint candy (optional)

Preparation:

  1. Spray an 8 x 8 silicone pan with cooking spray. Alternatively, spray an 8 x 8 pan with cooking spray, line with parchment paper and spray with cooking spray on top of the parchment.

  2. In a small bowl, dissolve gelatin in the 1/2 cup of water. Set aside to let it soften.

  3. Heat granulated sugar, corn syrup and 1/3 cup of water in a medium saucepan over medium heat. Stir until sugar dissolves. Raise the stove temperature to medium-high, and cook until the mixture reaches 245 degrees F, as measured by a candy thermometer.

  4. While the sugar syrup is cooking, place the egg whites and the salt in the bowl of an electric mixer. Beat until egg whites are thick and fluffy.

  5. When the sugar syrup reaches the proper temperature, turn the electric mixer on low, and pour the sugar syrup into the egg whites, being careful to keep the syrup away from the beaters.

  6. Pour the gelatin mixture into the saucepan that you used for the sugar syrup. It will still be hot and will heat the gelatin mixture. Then pour the gelatin mixture and the peppermint extract into the egg white mixture.

  7. Raise the speed of the electric mixer to high. Beat 5-10 minutes until the marshmallow mixture triples in volume and becomes the consistency of marshmallow fluff.

  8. Pour into the prepared pan. Smooth with a spatula. Sprinkle with peppermint chips, if desired. Let the marshmallows dry at least 4 hours or overnight.
