Oatmeal Cookies

Oatmeal cookies taste best when they are fresh from the oven. But you can preserve these soft and chewy oatmeal cookies longer by storing them with a piece of bread in an air-tight container.

This oatmeal cookies recipe uses a special spice mix that makes these oatmeal cookies smell like home.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 3/4 cup butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup firmly-packed brown sugar
  • 1 large egg
  • 1/2 tsp. vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 tsp. cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. mace
  • 2 cups quick-cooking oats
  • 1 cup chopped walnuts (optional)

Preparation:

    Preheat oven to 350 degrees F. Line two cookie sheets with parchment paper or spray with cooking spray.
  1. Cream butter and sugars together with an electric mixer until smooth, 2-3 minutes.

  2. Beat in egg and vanilla, until well-incorporated.

  3. Dump flour on top of butter mixture in a big mound, but do not mix yet. Sprinkle baking soda, salt, cinnamon, cloves and mace over flour. Stir with a wooden spoon or spatula until the flour is incorporated.

  4. Stir in the oats and walnuts, if using. Drop by rounded tablespoons-ful onto prepared cookie sheets. Flatten with your fingers slightly.

  5. Bake 12-14 minutes or until just set. Do not overbake, or the cookies will become hard.
