Peanut Butter Blossom Cookies

These peanut butter blossom cookies are one of my go-to cookie recipes when I need to bake something I know will be please a crowd. Everyone loves these peanut blossoms.

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup unsalted butter, softened to room temperature
  • 1/2 cup peanut butter
  • 3/4 cup firmly-packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 tsp. vanilla extract
  • 36 to 48 Hershey kisses, unwrapped

Preparation:

  1. Preheat oven to 325 degrees F. Line two cookie sheets with parchment paper or a silpat mat (Compare prices).

  2. In a medium bowl, whisk together the flour, baking powder and salt.

  3. Cream butter, peanut butter and sugars together with an electric mixer. Beat in egg, egg yolk and vanilla.

  4. Gradually, beat in the flour mixture until just combined. Do not overmix.

  5. Drop by rounded teaspoonsful onto prepared cookie sheets. Flatten slightly with your fingers.

  6. Bake 12-15 minutes until the cookies are just starting to brown. Remove from oven, and immediately press a Hershey kiss into the center of each cookie.
