These quesadillas are like a combination of a cheese quesadilla and a beef taco. Made with ground beef, this quesadilla recipe is fast, tasty and easy on the wallet, too.
Serve these beef quesadillas with tomato salsa and guacamole.
Prep Time: 10 minutes
Cook Time: 15 minutes
Ingredients:
- 1 lb. lean (90% - 93%) ground beef
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1/4 tsp. kosher salt
- 1/3 cup prepared chili con queso sauce (such as Eat Smart)
- 1 Tbsp. olive oil
- 4 10-inch flour tortillas
- 1 cup shredded cheddar cheese
Preparation:
- In a large skillet, brown ground beef.
- Add cumin, chili powder, salt and con queso sauce, stirring to mix well. Remove from heat.
- Heat olive oil in another skillet over medium-high heat.
- Spread 1/4 of the beef mixture over half of one tortilla. Top with 1/4 cup of the shredded cheese. Fold in half and place in the prepared pan.
- Cook until golden brown on one side, about 1 minute. Flip and cook until browned on the other side.
- Remove to a plate. Repeat with remaining tortillas, beef and cheese.
- Cut each tortilla into three triangles. Serve with guacamole and tomato salsa
