Chicken Tenders
Love chicken tenders, but want to change things up a bit? These chicken tenders are just what you need. The chicken is dipped in a spicy egg wash, then coated with crushed Goldfish cheese crackers and baked.Prep Time: 15 minutes
Cook Time: 12 minutes
Total Time: 27 minutes
Ingredients:
- 1 large egg
- 2-3 dashes hot sauce (use more or less, depending on how spicy you like it)
- 1/4 tsp. kosher salt
- 1-1/2 cups cheese crackers (such as Goldfish)
- 1 pound chicken tenders (or boneless, skinless chicken breasts cut into 3-inch strips)
Preparation:
- Preheat oven to 400 degrees F. Spray a baking sheet with cooking spray.
- In a small bowl, beat the egg, hot sauce and salt together.
- Crush the cheese crackers by placing them in a food processor and pulsing several times, or by placing them in a gallon-sized zip-top bag and pounding with the side of a rolling pin. Spread out into an even layer on a dinner plate.
- Dip chicken tenders in egg mixture first, then crackers. Place on prepared baking sheet.
- Bake on the center rack for 11-13 minutes until chicken is cooked through.
