Cod Fish with Nectarine Salsa

Cod Fish Recipe with Nectarine Salsa

This cod fish recipe is topped with a sweet salsa the kids will really enjoy. Serve this cod fish with grilled corn on the cob and green peas in lemon butter sauce.

Ingredients:

  • 3 medium nectarines
  • 1 large cucumber
  • 1 jalapeno pepper, finely diced
  • 1 Tbsp. lime juice
  • 1 Tbsp. honey
  • kosher salt and freshly-ground black pepper, to taste
  • 4 6 oz. cod fish fillets
  • 2 Tbsp. olive oil
  • 1 Tbsp. butter

Preparation:

  1. Peel and dice nectarines. Place in a medium bowl.

  2. Peel and seed cucumber. Dice. Add to nectarines.

  3. Add jalapeno pepper, lime juice, honey, salt and pepper. Taste and adjust seasonings. Set aside.

  4. Season cod fish with salt and pepper on both sides.

  5. Heat olive oil and butter in a large skillet. Add cod. Cook 3-5 minutes on each side, until cooked through (cod will be opaque and will flake easily with a fork).
