Ingredients:
- 3 medium nectarines
- 1 large cucumber
- 1 jalapeno pepper, finely diced
- 1 Tbsp. lime juice
- 1 Tbsp. honey
- kosher salt and freshly-ground black pepper, to taste
- 4 6 oz. cod fish fillets
- 2 Tbsp. olive oil
- 1 Tbsp. butter
Preparation:
- Peel and dice nectarines. Place in a medium bowl.
- Peel and seed cucumber. Dice. Add to nectarines.
- Add jalapeno pepper, lime juice, honey, salt and pepper. Taste and adjust seasonings. Set aside.
- Season cod fish with salt and pepper on both sides.
- Heat olive oil and butter in a large skillet. Add cod. Cook 3-5 minutes on each side, until cooked through (cod will be opaque and will flake easily with a fork).
