A crunchy, cheesy topping makes this baked cod fish recipe divine. Although the recipe calls for the onions to be sauteed with wine, if you prefer not to use wine, you can substitute apple juice.

Ingredients:
- 2 Tbsp. olive oil
- 1 cup diced onions
- 1 cup white wine
- kosher salt and black pepper
- 1 lb. cod fillets
- 1 cup Panko (Japanese bread crumbs)
- 1 Tbsp. melted butter
- 1/2 tsp. garlic powder
- 1 cup shredded gruyere or swiss cheese
Preparation:
- Preheat oven to 400 degrees F.
- Heat olive oil in a large, oven-proof skillet over medium heat.
- Add onions. Cook, stirring frequently, until onions are soft, 5-7 minutes.
- Stir in wine. Season with kosher salt and black pepper. Let the mixture cook 4-5 minutes. Remove from heat.
- Place cod fillets on top of the onions. Season with salt and pepper.
- Combine the remaining ingredients in a small bowl. Sprinkle over the cod fish.
- Cover with foil, and bake 10 minutes. Remove foil and bake until the fish is opaque and flakes easily with a fork, 5-10 minutes. (The baking time depends on how thick the cod fillets are. The thicker the fillets, the longer the fish will need to cook. Check at 5 minutes.)
