Pasta with Fresh Tomato Sauce Recipe
A bevy of summer vegetables add fresh flavor to this easy pasta and tomato sauce recipe. All you need to add to this Italian pasta recipe is a Caesar salad and garlic bread.Ingredients:
- 16 oz. rigatoni pasta
- 2 Tbsp. olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- kosher salt and freshly-ground black pepper, to taste
- 1 medium zucchini, diced
- 1 yellow squash, diced
- 4 cups seeded and diced Roma tomatoes
- 1 cup grated Parmesan cheese
Preparation:
- Prepare pasta according to package directions. Drain, reserving 1/4 cup of the pasta water.
- Meanwhile, heat olive oil in a large skillet over medium heat. Add onions and garlic. Season with salt and pepper.
- Cook, stirring occasionally, until vegetables soften, about 5 minutes.
- Add zucchini and yellow squash. Saute another 2-3 minutes.
- Add tomatoes and reserved pasta water. Cook, stirring occasionally, 10 minutes.
- Taste and adjust seasonings.
- Place pasta in a serving bowl. Pour fresh tomato sauce over. Toss. Top with grated Parmesan cheese.
