These fun quesadillas take the technique and basic ingredients of quesadillas in a different direction by giving them an all-American twist: Using hot dogs and beans in the filling. The result is a unique quesadillas recipe the kids will adore!
Ingredients:
- 2 tsp olive oil, divided
- 4 hot dogs
- 4 large (10-inch) flour tortillas
- 1 cup canned chili beans in mild sauce
- 1/4 cup ketchup
- 1-1/2 cups shredded cheddar cheese or Mexican cheese blend
Preparation:
- Heat 1 teaspoon of olive oil in a large nonstick skillet over medium heat.
- Slice hot dogs into 1/2-inch slivers (about 10 equal pieces). Add to skillet and saute until hot dogs are golden brown on both sides. Remove to a dish. Set aside.
- Heat remaining teaspoon of oil in skillet over medium heat.
- While the oil is getting warm, assemble the quesadillas: Place 1-2 tablespoons of beans on half of each quesadilla. Top with about 10 hot dog slices (the equivalent of one hot dog), 1 teaspoon of ketchup and about 1/3 cup of cheese. Fold over.
- Transfer quesadillas to skillet, one at a time. Cook until browned on one side, flip, and cook until browned on the other side and cheese is fully melted.
