Peanut Chicken Tenders Recipe
I like Thai peanut chicken, and my kids love chicken tenders, so I came up with this recipe to please all of us.Though it isn't as spicy as I like it, this peanut-crusted chicken tenders recipe is loaded with flavor. The orange mustard dipping sauce provides a sweet and tangy balance to the crunchy peanut chicken.
Ingredients:
- 1 large egg
- 1 tsp. Dijon mustard
- 1/2 tsp. kosher salt
- 1/4 tsp. black pepper
- 1-1/2 cups peanuts
- 1 pound chicken tenders (or 1 pound boneless, skinless chicken breasts cut into 3-inch strips)
- 2 tsp. olive oil

- For Orange Mustard Dipping Sauce:
- 1/2 cup orange marmalade
- 2 Tbsp. Dijon mustard
- 1 tsp. rice wine vinegar
- 1 tsp. soy sauce
- 2-3 dashes hot sauce
Preparation:
- Preheat oven to 400 degrees F.
- In a small shallow bowl, whisk together the egg, mustard, salt and pepper. Set aside.
- Place peanuts in a food processor, and pulse until the mixture forms coarse crumbs. It should be crumb-like, with a few peanut chunks. Alternatively, use a food chopper to crush peanuts. Spread peanuts out in a shallow dish.
- Spray a baking sheet with cooking spray.
- Dip each chicken tender in the egg first, then roll in the peanut crumbs. Place on prepared baking sheet.
- Drizzle olive oil over chicken tenders.
- Bake on the middle rack for 11-13 minutes until chicken tenders are cooked through.
- Prepare dipping sauce: Whisk together the orange marmalade, Dijon mustard, vinegar, soy sauce and hot sauce.
