I prefer to use smoked mozzarella cheese, because it gives these pizzas that special, real pizza parlor flavor. But smoked mozzarella cheese doesn't come pre-shredded, and it is more expensive than regular mozzarella, so use whatever is easiest for you.

Cook Time: 5 minutes
Ingredients:
- 4 10-inch flour tortillas or flatbreads (such as Flatout Wraps)
- 1/2 cup spaghetti sauce or pizza sauce
- 4 cups shredded smoked mozzarella cheese
- sliced pepperoni
Preparation:
- Preheat oven to 375 degrees F.
- Lay tortillas side by side on two heavy baking sheets.
- Top each tortilla with 2 Tbsp. spaghetti sauce, leaving a 1/2-inch border all the way around.
- Sprinkle 1 cup shredded mozzarella on each. Top with as much pepperoni as you like.
- Bake 3-5 minutes until cheese is bubbly and crust is golden brown.
Makes 4 pepperoni pizzas.
